It depends what you're looking for. For weird, mind-bendy type things, I'd recommend Moon or Following (Christopher Nolan's first film, I believe).
Other things that you should just see are Cloudy with a Chance of Meatballs, Man on Wire, Big Fan, or World's Greatest Dad.
This was just a quick look through my queue. I'm glad this is a thread, though. I'm always looking for more movies on Netflix Instant.
Some random recommendations: The Host, Freaked, I Think We're Alone Now (terrifying), Django, A Prophet, Revenge of the Ninja (if you like terrible movies about ninjas), Mac and Me (if you like terrible movies about McDonalds).
My stupid list is up to 80. This thing is turning into my old DVR. A ton of stuff to watch but then it becomes a chore to get through it all. I like all the random documentaries, shows and older movies I never got around to seeing. Some good Korean stuff is showing up too like Mother. I can't recommend anything since you'd need to narrow down your interests other than "movies". I usually keep up with the movie thread and see if it's streaming (for example Adam Scott's The Vicious Kind).
Moon was great, can't wait to see his next film, it's supposed to be really good.
Just watch documentaries. I Think We're Alone Now is indeed great.

Vice Guide to Travel: North Korea - bizarre, inside look at NK
Tales From the Script - screenwriter's talking heads
Exit Through the Gift Shop - you know it
Bomb It - graffiti around the world
Steal a Pencil for Me - finding love in a concentration camp, the odds these two ended up together post war are staggering
Paper Clips - students collect paper clips to get an idea of the number of those killed in concentration camps
Encounters at the End of the World - Wernor Herzog, holy shit was this interesting and funny. Herzog openly makes fun of a couple of the people he interviews in the Antarctic. The deafening silence broken by "space invader-like" noises from under the ice - so weird
The Atomoc Cafe - excellent; a collection of American propaganda and "educational" films from the 50s on up concerning nuclear energy. A fascinating historical lesson in how the media can hype and sway our thinking. This is only a collection of shorts and commercials, no narration or anything.
Fall From Grace: Doc about our friends, the Westboro Baptists!
Time of Fear: learned some interesting things about the Japanese internment during WW2 here I didn't know.
Countdown to Zero: recent nuclear arms documentary - we almost went boom in '95! Who knew?
Hiroshima: BBC History: Very very good doc on the dropping of the bomb with great interviews, archived footage and eye witness testimonials from ground zero itself. It's also quite dramatic in how the doc unfolds. Definitely recommend.
30 Days - I enjoyed Spurlock's FX series, some better than others.
Collapse - Want to be freaked out about the world around you. Take this on ya paranoids and have an anxiety attack. (seriously though this is quite riveting)
Lord, Save Us From Your Followers - I loved this thing. Entertaining, informative and even handed. A religious guy wants to know why everyone gets so angry when it comes to religion (religious and secular viewpoints explored).
Liberation - excellent overall WW2 doc with good actors narrating
Auschwitz - six hours long and unbelievably thorough and educational, this doc is what sent me on a ww2 kick recently. This comprehensive look at the history, inception and planing of the final solution (beginning with gassing the mentally ill and physically deformed citizens of Germany).
Casino Jack and the United States of Money - not particularly attention grabbing but no less shocking and infuriating. This also tracks the begininng of the republican and religious folks becoming cozy in the 80s.
That's some of the docs I've seen on there, for comedy and movies... tons. For example, I finally got to see Whitest Kids You Know on there (I is a fan now).

JPSpaulding and I are probably experts at the Joylessly Terrible and Thoroughly Unwatchable category of Netflix movies... if say, you want to go on a horrible movie binge. Being under the influence of something while watching these movies strongly encouraged.
ROTOR - a rogue robot cop goes on a mission to kill a woman after her boyfriend makes a speeding violation. The most dialogue heavy action movie I've ever seen. Also his weakness is loud noises.
FutureSport - Dean Cain must save Hawaii by playing this sport that combines hoverboards, hockey, and handball. YEAH. HOVERBOARDS.
Full Moon High - a boy's father (Ed McMahon) takes him to Transylvania (basically because he likes cheap whores) where he becomes a werewolf. Hilarity ensues.
Surf School - Lots of surfing doesn't take place.
Ski Patrol - Hey, where'd George Lopez's thick Latino accent go? Spoiler Alert: He doesn't ski at any point in the movie.
Cool as Ice
Zardoz - Flying stone heads. Penises are bad. 3rd ridiculous thing.
I havent watched it, but Leprechaun in the Hood has just been added to instant.
In terms of an actual good documentary, I highly recommend Confessions of a Superhero about the stories behind some of the costumed folks you see on Hollywood & Highland.
